The Eggplant Dip
Grilling eggplant should be done in the right manner. You should be really careful not to overcook, otherwise you will end up with a charred bitter-tasting vegetable.
Eggplants are healthy and are great for the diet. It is rich in fibers that will help stimulate better digestion.
· A list of the things you need:
· One large eggplant
· One tomato
· A tablespoon of coconut oil
· A teaspoon of red cane vinegar
· A tablespoon of chopped cilantro
· Salt
· Pepper
What you need to do:
In a gas burner, place all the eggplant and grill it. Do not let it stay in one place. Keep on turning until the skin of the eggplant turns dark and softer. Let it cool. Remove the skin gently and chop the eggplant into smaller pieces. Strain. Chop the tomatoes and onion. Mix with the eggplant along with the olive oil, vinegar. Add salt and pepper to taste. Serve with crackers or toasted bread. Enjoy!
The Brownie Muffin Attack
Brownies are normally heavy on the tummy. However, this one is bite-size that will help stimulate your appetite. It is a tasty treat for all ages
· Prepare the following:
· One cup of bean flour
· Half cup of vegetable oil
· One fourth cup of potato starch
· Two tablespoons of arrowroot
· One cup of unrefined sugar
· Two tablespoons of baking soda
· Half teaspoon of xanthan gum
· One teaspoon of salt
· A half cup of honey
· A half cup of cocoa powder
· A half cup of hot water
· Two cups of chocolate chips
· Two tablespoons of vanilla extract
What to do:
Preheat the oven to 325 degree Celsius. Line muffin pans and coat them oil. Preheat oven to 325 degrees
In a bowl, place all the dry ingredients: flour, potato starch, arrowroot, sugar, baking soda, xanthan gum, salt and cocoa powder. In another bowl, place the vegetable oil, and vanilla. Combine the two ingredients slowly. Keep on stirring until it forms a batter. Slowly add the half cup of hot water. Add the chocolate chips to the mixture.
Place a tablespoon of batter in a muffin can. Bake for 15 minutes. Allow it to cool first before removing from the tray.
Vegan Nachos
Nachos are probably one of the most famous appetizers. You will surely enjoy this appetizer that is done in a healthy way.
Here is a list of ingredients you will need:
· A bag of gluten-free tortilla chips
· A half cup of fried beans
· One cup of melted cheese
· Two cups of cabbage
· Three pieces of tomatoes
· Three fourths cup of sour cream
· A half cup of guacamole
· Vegetable oil
Preheat oven to 350 degrees F.
In a baking pan place some vegetable oil. Line with a layer of chips Put some cheese and keep on adding layers until the pan is full. Bake for a few minutes.
Dice tomatoes and thin down fried beans. Spread the beans on top of the baked chips. Add a handful of lettuce, tomatoes and top it off with guacamole and sour cream.
